Our Story

This was never just about opening a food truck.

Before Masala Mandala, I spent more than sixteen years creating luxurious South Asian weddings.

They taught me something I’ve carried into everything I’ve built since:

The details matter.

Not because everything needs to be perfect.

Because paying attention is one of the ways we care for people.

Eventually, that chapter of my life ended, and I found myself beginning again.

This time, much smaller.

A kitchen.
A food truck.
My son, Jian, beside me.
And food connected to where we come from.

Indian Food, Through Our Family

Masala Mandala is rooted in Indian food with the influence of my Kenyan-Indian upbringing and the food our family knows.

We make our curry bases in-house.
We grind spices.
We prepare our marinades and chutneys.
We chop the tomatoes and onions.
We make our samosas.

We work with whole ingredients and pay attention to the seemingly small things because, to us, they aren’t small.

Precision is love.

It’s something you’ll see us practicing again and again in our kitchen.

Homemade Means Something to Us.

Homemade isn’t a marketing word here.

It means somebody actually did the work.

There are onions that were cut. Tomatoes that were chopped. Spices that met hot oil. Bases that were cooked until they were ready—not simply until a timer went off.

There are recipes we’ve refined, portions we’ve measured, processes we’ve practiced and systems we’ve built so the meal you receive reflects the same care each time.

Some components are prepared ahead and preserved so we can maintain that consistency while still doing the work ourselves.

What matters to us is knowing what goes into your food, how it was made, and why we make it that way.

Whole ingredients.
Made in-house.
Prepared with intention.

That’s what homemade means to us.

And This Business Is Raising Us, Too.

Masala Mandala has become part kitchen, part classroom and part practice.

My son Jian has been beside me from the beginning.

He cooks. He tastes. He cleans. He packs orders. He serves customers. And sometimes, he leads the kitchen when I’m not there.

I’ve watched him learn the hard skills required to make good food.

But I’ve also watched something more important take shape:

Care.
Responsibility.
Discernment.
Service.
Ownership.

Those things aren’t written on our menu.

But they’re inside almost everything we hand you.

We’re tucked behind Denny’s in Florida City, between the Travelodge and Quality Inn, just before the road carries you south toward the Florida Keys.

Some people find us on their way home.

Some after a day in the Everglades.

Some are heading toward Key Largo.

And some live a few minutes away and simply don’t want to cook tonight.
